I forgot how much I love this!

I am dead serious. Not just saying it. I have been eating the the Whole30 for two days and holy non-compliant cannoli I feel great. I have had no heartburn for the first time in a few days. 

So I did something new today that I didn't go during my last Whole30. I made Paleo mayo. If I had known how easy this was I think I would have never bought store mayo. I am not crazy about mayo in the first place, but I needed something to do for dressing tonight for my shrimp and coleslaw salad. So I made up some mayo. Spiced it up, and added some vinegar and a little water to thin it out and used it as salad dressing. 


And it was fantastic. I used the Paleo recipe from the whole30.com website. And I made it with my hand mixer. My blender is terrible and I don't have a food processor so I made due and it worked great. 

I have been saving jars from spaghetti sauce and salsa which my dear husband hates, but they came in handy for storing the mayo. 

The recipe made about a cup, minus what I used for my salad tonight. I was very impressed with myself. For any of you mayo experts you can come have a taste, since no one else in my house will try it. Mayo haters. Smh.

And so it begins...


My 2nd full Whole 30 journey began today. Yesterday I struggled with a pinched nerve and couldn't move my neck or get any sleep so I didn't start yesterday as I had planned. 

Here is my lunch from today.  Salmon cakes (or patties, whichever you prefer to call them) power greens sautéed in coconut oil, and mixed veggies. 

These salmon cakes are my go to Whole 30 meal. I know, some find salmon disgusting...like my eldest girl. But I promise you that if you like salmon and want a quick, easy meal that makes enough for the family, or enough for left over for lunch...if your co-workers won't run you out of the office for stinking up the place...then this is your meal. It also freezes raw and can be ready to cook at will.

Tonight for dinner I have some pork country style ribs in the crockpot.  Just a little seasoning and salt and pepper is all it needs. I don't have my veggies decided yet, but I think I may bake white potatoes for my family and a sweet potato for myself.   I love the sweet potato with olive oil and cinnamon. So incredibly tasty. 

As I have stated in the past the Whole30 for me is super easy because I love to eat all food.  Salmon, Brussels sprouts, asparagus, and sweet potatoes are some things that I know aren't for everyone, but I love them.  And I think if you try them in different recipes you can learn to love them too. 

Oh a funny quote from my little one today as she took a sip of my black coffee. She usually tries to take a sip of my coffee when it has cream in it, so today I told her yes when she asked and she took one sip and said, "Mom, your coffee is not very good today."  No honey, no it isn't.
